Honey-brown, not perishable dessert cheese. It has a sweet, caramel flavor and has an unusual aroma.
Norway's children often eat it like breakfast. Serve the cheese with a thin puff on white fresh bread or a toast with black tea. Perfect for evening tea or light lunch at work, cheese should not be chilled, which greatly spoils its taste.
Like Gudbrandsdalen is Norway's national cheese. In the old days, Gjeitost or Geitost were entirely from goat's milk, but now they are made from a mixture of goat and cow's milk. During its preparation, instead of cottage cheese, liquid whey is used. It is available in different versions, and the classification depends on the different proportions of cow and goat milk.
