Curler in its present form invented in 1982 by Nicolas Crusoe, in a new way to serve Swiss cheese, which monks made more than eight centuries ago. Nowadays curler is used mainly for cheese Tete de Mouans ( in translation from the French - "the head of a monk"). The idea of ​​not cutting cheese, and scraping it with the finest layers, is connected with the monks from the abbey of Bellelay. To do this, you need to put the whole head of cheese on a steel axle, attached in the middle to a wooden one, or beech chalkboard. From above on the axle, put a knife rotating around the axis. Scrolling it over the cheese, the curls are formed, which are called "gill", or "chanterelles". Slicing cheese finely, feels a deeper, velvety taste and a rich flavor - hot and tender, sweetish and spicy at the same time, with spicy shades. To make the chip turned out elegant and not crumbled, the cheese should be cooled, and when cutting, do not need to strongly press on the knife. Planed cheese is not advised to hold for longer than 25-30 minutes, otherwise it begins to lose its remarkable properties.
